Let's see, VNs that I've actually finished...
Fate/Stay-night is one of the few VNs that I've finished completely (as in; including all bad ends, unlockable features, etc.).
Maybe it's because FSN is the first visual novel that I've seriously played, but I still think that it's one of the most impressive VNs out there.
I loved the storylines, the characters were pretty good too (Rin, of course, stands out), and I particularly liked how the setting had a magic system that's well thought-out and properly explained. (in far too many stories, magic is really only used as a convenient plot device, and once you start asking about exacly how it works, you'll usually get an answer that amounts to "it's magic, lol")
The only downside about FSN is that it gets a bit long-winded and tedious in some parts. I admit that that this didn't really bother me that much, though I can imagine that it's a turn-off for other people.
And now that we're talking about TypeMoon anyway, I might as well mention Tsukihime, though I haven't finished that one completely yet (I've completed Arcueid's, Ciel's and Hisui's routes, and I'm currently busy working my way through Akiha's route).
